December

Photo dump for December!

Livy and Andoo's nursery teacher brought a gingerbread house kit over for the kids.  Liv loved decorating and Andrew enjoyed sneaking candy.

Olivia got to be an angel for the nativity at church.  She was thrilled about her part and played it very well.
 After the program, we went to the store and she wasn't ready to take off her costume yet.

Spencer and I enjoyed a date night and went to a fancy dinner then to see the Nutcracker.

Olivia had a Christmas program at school.  She did a GREAT job!

 Our power went out one day at 8am and didn't come back on until almost midnight.  Once Andrew got past the fact that there would be no Elmo that morning, the kids both did really well.  It got down to 57 degrees in the house so we snuggled in and read books, played games, and played toys.
When Spencer got home, we built a fire in the basement.  It got so warm down there!  I am so grateful that we have a wood burning fireplace in the house! 
By this time, it was dark.  I was ready for the power to come back on but the kids were having a blast with flashlights and helping Dad build a fire!

 Christmas morning!  
Santa came and left plenty of goodies for us this year!
 Livy was thrilled with her princess book and flashlight from Grandma and Grandpa.
Andrew was thrilled with his car race track and his hug me Elmo.

My Daughter's Hair Story

My daughter's hair.  My daughter's hair!  
Where to begin? 


 She was born bald and stayed that way for about 8 months...

Went dandelion for a while...

 Then she finally grew a thin crop of blonde hair...barely enough to hold a barrette.

   I haven't cut it except for a couple of trims.  

Slowly, it got longer and longer.

Finally-FINALLY this summer it has been long enough to actually do something with!  It has been so much fun to be a little more creative than a quick half-up or barrette. 
 This was probably the best hair-do to date...
 
 A french braid on both sides meeting in a pony in the back.  Ah-so pretty!





 And then IT happened.  










She cut it.  A big slanted chop right out of the front.  





Tears and devastation followed.  


Well, not really...but it was terrifying to hear the words, 
"Mama, I cut it! It's so pretty!" coming from the bathroom.

I did the best I could to even it out.  The result was a short bob with short bangs. 
 She was thrilled with it so I was happy.


It is a good thing she's so cute-she can pull of any hairdo.

Cherry Hill

Our annual Slade camping trip was at Cherry Hill this year.  Good times with good people. 
 It was H-O-T!  Even in the shade it felt like it was about a million degrees.  Poor Andoo got a little overheated.

 Unfortunately, I didn't get any pictures in the park.  Olivia had the time of her life floating in the lazy river and going down the dragon slides.  She still carries the map of Cherry Hill around with her and tells me where her favorite rides are.

This Week in Recipes




Ingredients
1 (14 1/2 ounce) cans tomatoes and green chilies
1 (14 1/2 ounce) cans whole canned tomatoes (plus the juice)
4 teaspoons jalapenos (canned, diced, not pickled)
1/4 cup yellow onions (diced)
1/2-3/4 teaspoon garlic salt
1/2 teaspoon cumin
1/4 teaspoon sugar
2 drops doTERRA Lime Essential Oil
¼ C Cilantro
Directions:  In food processor place jalapenos and onions, process for just a few seconds.  Add both cans of tomatoes, salt, sugar, and cumin. Process all remaining ingredients until well blended but do not puree.  Place in covered container and chill. A couple of hours of chilling will help blend and enrich the flavor.  Serve with your favorite chips.

*Note: I accidentally added 5-6 drops of lime because it comes out so fast.  It was still delicious with the extra lime!

This Week in Recipes...

I admit it.  The majority of the recipes I make come from the internets. Pinterest is my main cookbook.  Definitely different from the generations before us where you had to call your friends and family to get recipes or look them up in a cookbook.  It is so nice to have thousands of recipes at my fingertips. 

Since everyone is always looking for new recipes (at least I am, anyway), I thought I would start sharing the ones that I have actually made and that my family approves of. 

This week's selections are...


These were easy to make and delicious to eat. 
Give me anything with tortillas and salsa and I'm in.

Is anyone else looking for things to make to use up that ginormous bag of quinoa from Costco?
Well here is a good one.  I actually really enjoyed these.  Not bad to make and pretty tasty with some marinara dipping sauce.

Bear Lake

Ahhh Bear Lake.  We went up last weekend for a fun, relaxing few days.  After pulling an all-nighter at work Thursday night/Friday morning, I came home, slept for a while, packed up, and we drove to the lake...with a stop at the Maverick in Evanston for a huge Coke and gas station nachos.  That is the only place I ever get gas station nachos.  Probably a good thing.
We enjoyed watching a big thunderstorm roll through on Saturday morning.  Since that put the beach and water activities on hold, we headed into Montpelier for a nice shopping trip to Kings. We found lots of treasures.  But for reals-they had a ton of GREAT Melissa and Doug toys that I had never seen before.  Mom and I went a little nuts but I am saving some for Christmas...so it's okay.  
That afternoon, the weather cleared and we were able to enjoy some beach and swimming time.  It was a bit overcast but still nice and warm.  The water was chilly, but you got used to it.  The kids LOVED splashing around and digging in the sand.  I always say Bear Lake is the perfect lake for little kids because it is so shallow for such a long ways out.  The kids could wander to their hearts' content and I never had to worry about them getting in too deep.  Andrew tasted some sand and Livy went bug hunting (probably because we bought her a bug cage at Kings earlier that day-thanks again, Melissa and Doug!)
We had tin-foil dinners that night and Spence and I went on a little date sans kids and got a milkshake-we even met THE Merlin.  If you know Bear Lake, you have heard of Merlin's Drive In.  Merlin was a really nice guy and we had a nice chat with him.  I felt like I had met a local celebrity. :)
All good things must come to an end and we headed home on Sunday morning.  After a detour that sent us through Logan, we made it home.  Great trip, great weekend.

Some Summer Recipes

I tried a few new recipes last week and both were really tasty! AND both were vegetarian.  I'm definitely not becoming a vegetarian anytime soon, but I do like the idea of
 dinner = vegetables > meat. 
 So I googled some vegetarian recipes and came up with two that turned out to be winners.  Both recipes are from the Cooking Light website (links below). 
(And some kind soul already entered these recipes into MyFitnessPal, bless their little heart! 
Saved me a good 15 minutes entering it all-thank you, kind soul!)



The first was Baked Ziti with Summer Vegetables. I love a good pasta dish and this filled the bill without being super heavy.  I omitted the crushed red pepper because I'm a wuss and red pepper scares me.  Very tasty-highly recommend!


The second was Black Bean Burgers. I've never had a non-hamburger burger before because it just seemed wrong.  BUT-this was really good.  A good first non-meat burger for a beginner.  Easy to make and delicious to eat.  Even Olivia liked it.

Of Late

I thought about going back and doing a million posts to catch up on blogging, but then I thought that sounded extremely overwhelming, so I decided against it.  Recap on the last few months:


  • We decided to put an addition onto our house.  They dug the hole in our backyard the Friday before Easter.
  • We had a fun Easter complete with egg dying and hunting.
  • Andrew turned one on April 13th.  We partied hard.
  • We moved down to the basement while construction happened.
  • We lived in a dusty, jumbled mess for 3 months.
  • Spence and I ran the Salt Lake Half Marathon.  
  • We had a "whirlwind weekend" and decided last minute to go down to Capitol Reef.  It was a good getaway from the construction dust.  It was a spontaneous, fun weekend.  Spencer and I decided we should do that more often-just leave on a whim.  Hence "whirlwind weekend" was dubbed to name our future spontaneous trips.
  • Olivia turned three on May 20th.  We partied hard.
  • Construction was completed the first week in June
  • We moved into our new master bedroom and have LOVED having the extra space in the house.
  • Both kids had a round of strep throat.
  • Spencer ran the Bear Lake Half Marathon and the Ragnar Relay again this year.
  • We celebrated 6 years of marriage on June 14th.  
I think that pretty much brings us up to date!
